Restaurant review: PureBistro – hidden terrace in Torikorttelit blocks

PureBistro is a modern bistro with hidden terrace next to the Market Square in Torikorttelit blocks.  Restaurant is owned by Michelin star restaurant Luomo (on the 2nd floor) chef”s Jouni Toivanen and Mika Mattila. That explains partly why PureBistro is one of the five Michelin Bib Gourmand restaurants in Helsinki.

Dining room at PureBistro is quite small and therefore in the summer time you might decide to dine outside, which we did as temperature was close to 30C degrees. The entrance to the terrace is either through restaurant or gateway which is in Katariinankatu. There are only about 30 seats at the terrace, therefore better arrive early because restaurant does not take reservations there.

Restaurant used to have 3 course dinner at the price of 45€. But not this time! Maybe PureBistro wants to utilize high tourist season and not offer any special prices if you eat starter, main course and dessert. Many fine dining bistros are closed at the moment, that might be another reason to cash in. On the other hand prices are reasonable compared to food quality.

Because of excellent weather had to start the dinner with Champagne, Pol Roger Extra Brut. To be honest, too dry for us.

After placing order you will get fresh bread paper bag on the table. I am sure that you will eat every piece of bread, they are so tasty.

For starters we ordered RAINBOWTROUT WITH TRADITIONAL FINNISH SALAD and BARBEQUE PORK “JAPANESE STYLE”

Trout confit was slightly cooked but so little that it made us wonder how it was prepared. One change was made; “scrambled eggs” replaced dill-potato salad because it included some milk. Pork was as it would have been prepared in qenuine Asian restaurant. It included miso, teriayaki sauce and mushrooms. PureBistro usualluy have one or two portions available with Asian flavors.

For main courses we had two times PAN FRIED PEARCH, CHANTERELLES AND CRAYFISH- POTATO TERRINE but two different versions of it.

First picture is portion without any changes. Perfectly fried small pearch pieces were delicious. No single fish bones although perch is one of the most difficult fishes to remove them. Sweet fennel supplemented the taste of chanterellers. Ingredients which included milk were replaced with turnips and oil dressing. Have not ever before tasted roasted turnips but will definately try them at home.

For desserts we ordered STRAWBERRYMILK” and CHEESEs.

“Milk” in the first dessert was replaced with strawberry sorbet and sauce. Again excellent example of kitchen’s creativeness and competence to take account of food allergies. Cheeses were tasty as expected. Especially Comte paired well with jam.

For wine we had Tesch 1 Liter Riesling, only riesling on wine list. Wine paired well with all dishes we had; well, maybe not with desserts. Dry, about 6 g/l sugar, balanced acidity and minerality. If you prefer vintage wines you could also order from restaurant Luomo’s wine list.  

With coffee and tea had to try “soft” Jacopo Poli Grappa di Sassicaia Elevata in Barili. Not basic grappa, more like real dessert “wine”.

Waiter left the bottle on our table so that we could study it more detailed. Label on the backside of the bottle told that Grappa had been matured in Sassicaia barrels and it was made mainly from Cabernet Franc and Cabernet Savignon grapes.

PureBistro is genuine Michelin Bib Gourmand restaurant and actually one of the first fine dining bistro type of restaurants in Helsinki. Chef’s at the kitchen create flexibly excellent portions and menu changes regularly.

If weather is suitable, you must try the terrace where you can dine in restful and relaxed athmosphere.

Menu is short – 3 starters, 3 main courses and 2 desserts. If you choose 3 course dinner, the price is 45€. One option is to have drink at the bar and taste some small bites, in Finnish Snadit. As English and Finnish versions of the names of the portions are not exactly the same, I included both language versions.

Starters we ordered had fancy names; Hamashi Sashimi with Avocado & Seaweed Piikkimakrillisashimia, avokadokreemiä, soijaa ja levää and Carpaccio, Bloody Mary Sorbet & Tallowvinegar Kotimaista rotukarjaa, bloody mary sorbet ja emmentalia.

Sashimi was fresh and side dishes accompanied fish in oriental portion well. Lack of salt was only minus. Beef carpaccio was so soft that it could have eaten with spoon. I am not sure if kitchen tried to create picture of hedgehog on the plate, but portion looked like it.

For main courses we had two times Fried Trout, Cauliflower & Cassis Ahvenanmaan taimenta, kukkakaalia ja herukkaa but requested some changes to one of them. Restaurant created excellent version of this portion by replacing cauliflower with ratatouille.

Trout itself was perfectly fried, you could also eat fish skin as it was enough crispy. And what is most important, fish was not over-fried which happens too often also in so called good restaurants.

For desserts ordered Tosca, VanillaIceCream & MilkXoco Toscakakkua, vaniljajäätelöä ja maitosuklaata and “Macedonia De Frutas” Liqourice “Hedelmäsalaattia” ja lakritsisorbettia.

Tosca cake was scrumptious. Amount of toffee sauce was maybe too much, but had to eat all of it anyway. Take a look at how fruits and sorbet was placed on the plate! PureBistro really has an artist in the kitchen, remember the hedgehog.

Had to order bottle of Tesch 1 Liter Riesling for two reasons; riesling weeks with special menus had just ended but Tesch riesling was still available and the unsual size of the bottle (1 liter) is rare apparition.

Wine paired well with all dishes we had; well, maybe not with desserts. Dry, about 6 g/l sugar if I remember right what waitress told, and balanced acidity and minerality.

As we got window table, overall grade is 4,5. Propably next time we shall dine at the terrace; waiting for warmer summer days….Service is in balance with kitchen’s creativeness and skills.

Huge improvement compared to first visit a year ago! Guess, if the food in the picture above is fish or meat? You will only know it by reading on.

PureBistro is a modern bistro and bar with two terraces next to the Market Square in Torikorttelit buildings. Restaurant serves uncomplicated but well prepared bistro food. PureBistro is owned by Michelin star restaurant Luomo chef”s Jouni Toivanen and Mika Mattila. Luomo operates in 2nd floor.

Dining room is quite small but this evening it did not bother as restaurant was not full. Ask for window table and you can enjoy sea view and observe what happens at Market Square.

Our group ordered for starters one HOT FOREST MUSHROOMS WITH ORGANIC EGG 65 Metsäsieniä, tattitoffeeta ja luomukananmuna and several portions of TOAST SKAGEN Briossia, katkarapuja, siianmätiä, chilimajoneesia.

Had tasted at Taste of Helsinki 2013 boletus toffee and organic egg 65 but must repeat did not like combination. 65 means egg has been cooked up to 65C degrees, so it is was loose. Boletus toffee is really exotic “sauce”; it is too sweet for starter looking like grey brownish tepid liquid, almost like the wash water of the mushrooms. Big chanterelles saved a bit but again whole experience was too exotic to say it in nice words.

Toast Skagen was delicious and quite spicy due to chili. Whitefish roe crowned this otherwise simple looking portion.

For main courses we had GRILLED ROOTVEGGIES, FETA CHEESE AND OAT Grillattuja juureksia, fetaa ja paahdettu ohraa, MISO-CURED SALMON AND VEGE TEMPURA JAPONESE Miso marinoitua lohta, tempuravihanneksia ja soijaa, GUINEA FOWL WITH TAPIOCA AND CURRY Helmikanaa, tapiokahelmiä ja currya and from daily menu STEAK ENTRECOTE JAPONESE STYLE.

Because of different cravings, all four main course were tasted and all of them were great.

Feta cheese paired well with rootveggies from which beetroot was welcomed choice. Salmon was a little bit raw from the middle which suited perfectly to Japonese style. Would have liked a little bit more tempura vegetables (chili, egg plant and lotus root), which were served in separate small bowl. Entrecote was tender and included also chili, which seemed to be unifying spice to most of the portions.

Now answer for the question: Meat and more specific, guinea fowl. Most of us first thought there was fish on the plate. How cleverly and skillfully set!

For desserts one LE MARQUISE AU CHOCOLAT Suklaamarkiisia ja pistaasisorbet and from daily menu most of us chose CHOCO AND BANANA Banaanijäätelöä ja suklaakastiketta. One dessert without milk succeeded also well.

All desserts were scrumptious. Sorbet did not differ from ice-cream as it was so “creamy”. However, taste of pistachio was pushy.

Food was excellent. We had eaten at PureBistro in July (no review available), so we already expected great experience. Service was also in good shape, well explained what portions included and good knowledge of wines.

One weakness was the wine list, it was short, only about 5-6 white and red wines available. You could of course choose from separate wine list but prices for quality wines would be the same (expensive) as in restaurant Luomo. We had Max Ferdinand Richter Mûlheimer Sonnelay Riesling Zeppelin as white wine. Had to taste it before ordering as it was close to semi-dry, but suspicion vanished after tasting as wine was not too sweet at all. For red wine we enjoyed Dourthe Clos de los Siete which paired well also with salmon.

Restaurant review: PureBistro

PureBistro is a modern bistro and bar at the Market Square in Torikorttelit area. Restaurant serves uncomplicated but handmade and modern bistro food. PureBistro is owned by Michelin star restaurant Luomo chef”s Jouni Toivanen and Mika Mattila. Dining room is quite small as well as tables. Ask for window table and you can enjoy sea view and watch what happens at Market Square. At 8PM restaurant was full and you could mostly hear english and swedish; well marketed to hotels or travel agencies.

As the core value is fresh materials, the menu is short, but there is changing daily specials available. There might be for example a whole bird, fish or shellfish to be shared. This time restaurant had lamb as daily speciality. If it would still be summer you could enjoy lunch or dinner at one of the terraces.

Fresh bread is served in paper bag with caramelized butter. Unfortunately butterscotch taste did not match so well with white bread served, maybe it would have with rye bread.

Three courses cost 44€, if you order dishes separately bill would be 50€. During this visit prices were a little bit high compared to the level of portions.

For starters ordered SKAGEN and DUCK IN JAPAN. Skagen included brioche, shrimps, whitefish roe and chili mayonnaise. Not so typical brioche and chili could have tasted more. Duck in Japan was duck leg and foie terrine, bacon dashi and miso mayonnaise. Terrine was really delicious but could not found the taste of Japan.

For main courses ordered daily speciality LAMB MOROCCO STYLE and SALMON CONFIT ‘APIACEAE’. Lamb was too greasy and without taste of Morocco. Salmon was stewed in olive oil and should include set of flowers.  Fish was stewed perfectly as it was still partly red inside but set of flowers remains mystery. As pyre was asked to left out oufit was close to soup but no spoon available.


For dessert had QUEEN rasperry and blueberry and BANANA SPLIT. “Queen” was fresh but more like a juice. Banana Split was daily speciality but quite ordinary dessert.

Suggest to order from a la carte list instead of daily speciality. Hope PureBistro uses more spices because oriental names of the dishes make believe they are well flavoured. However, the location is perfect and athmosphere casual for chatting groups.

Demo proved to be real Michelin star restaurant and took the first place, food and service were perfect.

Pastor with Peruvian cuisine, Rikhards Gastropub and Italian restaurant Ragu were opened 2014, which means that there is still place for good restaurants in Helsinki. But Rikhards informed just recently that they are renewing concept and will reopen in February 2015.

Guide Michelin: Bib Gourmand designated restaurants in Helsinki

What is Bib Gourmand restaurant?

The Bib Gourmand designation denotes good cuisine at a reasonable price in a variety of comfort categories. Defined as “Inspectors’ Favorites for Good Value,” Bib Gourmand restaurants offer two courses and a glass of wine or dessert for $40 or less (tax and gratuity not included), and are often of most value to a city’s residents, who regularly dine in neighborhood restaurants” (source: Guide Michelin)

Amazing that first three restaurants are owned by same chef’s, Tomi Björk and Matti Wiberg. They have just opened 4th restaurant Bronda, which will be reviewed by Restaurant and Wine epicure (reijosfood) in April. Maybe next year it will be designated as Bib Gourmand restaurant?

Emo and PureBistro are partly owned by Michelin star restaurant chef’s; Emo is little sister for Olo and PureBistro for Luomo.

Grotesk and Solna lost their Bib Gourmand designations.

Conclusion: 

Would say that at least 3 of the designated restaurants have earned to be on the list; Emo, Farang and PureBistro. Now that Michelin Guide have chosen 3 “ethnic” kitchens, Yume could replace Gaijin. But as it is owned by Kämp Group not by chef’s, it might be obstacle. There are also some other restaurants which could be designated like Copas y Tapas, Meche or Spis, see reviews at reijosfood.com.





Restaurant reviews in Helsinki 2013 – breakthrough of “gourmet” bistros

Year 2013 ended up too soon. Did not have time to visit all those restaurants had planned. Anyway, breakthrough of “gourmet” bistros highlighted the year.

Bistros are relaxed, unformal dining spots with decent service and food.

In Helsinki, there has been established during couple of last years “gourmet” bistros, which compete with unique decoration, good service and well designed, delicious dishes. They also have short a la carte list and one or to menu alternatives. We could call some of these bistros restaurants, but part of them do not use that naming.

Example of “gourmet” food can be found from picture below which is taken at Spis. Whole portion consists of fresh vegetables but also of fish, which is uniquely prepared.

As we were not able to visit all “gourmet” bistros in Helsinki, results were as follows:

1. Spis 13,50

2. Gastrobar Emo and Grotesk Winebar 13,25

3. Glogatan 4,  Meche and Muru 13,00

From these restaurants I would say Spis, Gastrobar Emo, Grotesk Winebar, Meche and Muru are so called “gourmet” bistros. Add also PureBistro which got 12,50 points and we can really call year 2013 “year of bistros”. 4 of the restaurants above have link to Michelin star restaurants, can you guess how?

Glogatan 4 is more restaurant than bistro and Farang serves asian gourmet kitchen, which you can not miss.

How Spis differs from other “gourmet” bistros? It serves greetings from kitchen between courses which others do not. That is one reason why it took the first place this year. It also has longer menus than others (full review at reijosfood.com)

Why Grotesk Winebar succeeded although it is quite new? It serves rare delicacies which you do not get in other bistros. It also provides professional wine pairings with dishes (full review at reijosfood.com)

Michelin Guide has updated it’s list of rewarded restaurants. All 5 existing Michelin restaurants kept their stars, so no new Michelin restaurants in Finland or Helsinki. G.W. Sundmans might be rewarded soon as it has been highlighted with red letters meaning “rising star”.  Restaurant has had 1 Michelin star several years ago.

Also interesting is that Grotesk, owned by same chefs as Demo, kept Bid Gourmand logo although it changed it’s style. Update: did not remember to write that PureBistro is owned by Luomu owners! One Michelin star restaurant and one Bib Gourmand restaurant. However, when we vistited PureBistro, we were not so happy about the food.
